You’ve heard of heirloom tomatoes, why not heirloom wheat? Warthog is a varietal of wheat that grows here in Pennsylvania. We knead it into a delicious whole-wheat brown bread that’s slightly nutty and just a touch sweet. If you can get your hands on it, fabulous. If not, ask around at your local farmers market for heirloom bread flours. Any high-protein bread flour will work well in this recipe, and you may stumble upon something really extraordinary.
