Making your own bitters is surprisingly easy and allows you to customize cocktails to your personal tastes. Here we’re using grapefruit to flavor the bitters for use in The Elder Sage, but you can replace the grapefruit in this recipe with anything from Meyer lemon to watermelon. Want just the tiniest hint of heat? You can create a subtle ancho-chile bitter. Want a little chocolaty note? You can make a cacao-nib bitter. It’s all about infusing your neutral
