When I first made this soup for myself, it was with a small bulb of fennel I had found cheaply in my local greengrocers. But fresh fennel bulbs are generally an expensive ingredient, so I have substituted it here with fennel seeds. Feel free to use the bulb if you want to, but the soup is just fine without.
