When I asked my readers which recipes they would most like to see in a vegan book, the call for sandwiches and lunch options was surprisingly deafening. Supermarkets and convenience stores seem convinced that we can live on falafel and hummus wraps alone, so I was determined to find some simple but delicious alternatives. This one requires a little preparation, but it’s worth it for the end result. Make a big tub of the filling by doubling the recipe; it will keep for five days in the fridg
