A few years ago, pulled pork fashionably exploded onto the popular food scene – so ubiquitous that it is now rammed into sandwiches at supermarkets and on almost every pub menu. The vegan equivalent is almost indescernible from its porcine counterpart; soft, slow-cooked jackfruit takes on the flavours in the same way as slow-cooked pork does, but without the expense, nor the animal involvement. Heap this into buns hot or cold, or shape into burgers with a little flour and fry until crisp.</
