I made these as a lighter side dish to my ‘Pork Belly’ for a group of friends for a special dinner. I wanted it to be a showstopper; something that would look beautiful and taste astounding – simple flavours but an absolute mouth party to boot. I love a pickle on the side of almost any savoury dish; the tang and brightness balancing the flavours of anything particularly heavy, or potent.
