Celeriac is one of the cheapest vegetables you can buy in the supermarket by the gram, but it is often unfairly maligned because of its unwieldiness and knobbly, grubby exterior. The flavour is lighter and more delicate than you would imagine on first glance, making it ideal as a vehicle for all kinds of rich sauces. This gnocchi is a hit with my friends and family, and very simple to make. If you are unaccustomed to the taste of celeriac, you can use half celeriac, half potato instead.
