I have – somewhat audaciously – based this recipe on Osso Bucco, a traditional Italian dish of veal shanks, served on the bone and cooked slowly in wine and vegetables. When I had the idea for this book, I wanted to recreate my favourite dishes from my whole lifetime so far, as simple vegan versions. Some of those proved to be extremely challenging, and Osso Bucco went on my list as a joke, at first, as I didn’t imagine I would be able to recreate anything close to the original. I’m pleased
