One of the common complaints I hear about adopting a more plant-based diet is the difficulty in giving up eggs. An ideal accompaniment to the Chinese-style Mushroom Curry, this is a worthy substitute for traditional egg-fried rice – my friends and family can barely tell the difference between the two.

Ingredients

  • 200 g long grain rice
  • A pinch of salt
  • 4 tbsp

  1. First soak your rice to get rid of any excess starch. Place it in a pan of cold water for half an hour, then drain and rinse thoroughly under a cold running tap, using your fingers to separate the grains well to really work it all out.
