This five-ingredient stuffing can be adapted to use up whatever you have in the cupboard; I have swapped the leek for onions of all colours, and the tinned mandarins for tinned pears or grated apples, depending on what I had in at the time. Use this as a bedrock recipe rather than a prescription, and feel free to adapt it to your tastes and storecupboards. It’s called a stuffing, but I get away with serving it as a main course to vegetarian and vegan guests when I can’t stretch to anything
