These cookies are always very popular in my household as a quick rustle-up when I fancy a biscuit or am having a cup of tea with a friend. I sometimes replace the syrup with maple syrup if I’m feeling fancy, or black treacle if I have it in. Jam also works, for a PBJ cookie; basically, use this as a base and experiment with it.

Ingredients

  • 50 ml light cooking oil, plus extra for greasing – sunflower, vegetable or rapeseed
  • 4 tbsp peanut butter

Method

  1. First preheat your oven to 180°C (fan 160°C/350°F/gas 4), and lightly grease a large baking tray in preparation for the cookies. If you have greaseproof paper or baking parchment, you can use that instead.
  2. Pour the oil into a large mixing bowl and add
