I am a huge advocate of using cheap ingredients and have been making rice pudding with supermarket value-range long grain rice for years, much to the chagrin of some of my more pedantic readership. Yet every now and again something comes along that is the exception the rule – we are all complex human beings, after all – and this is one of them. I hold fast on not caring for arborio rice in risotto, but the nutty, rich flavour of red rice makes this pudding utter comfort-food heaven. You can
