This simple cake recipe can be customised however you like – I have made it with peanut butter icing and strawberry jam slathered between the layers, and as a chocolate cake by adding cocoa powder and blackcurrant jam, but my favourite iteration is as a classic vanilla sponge with ‘butter’ icing and jam, and multicoloured sprinkles all over – a kitsch and understated classic in a world of ever more ridiculous showstopper cakes, and a hit with adults and children alike for all occasions.
