Sumac, available in well-stocked grocery stores and Middle Eastern markets, is popular in countries such as Turkey and Iran. Made from finely ground sumac berries, this tart spice is essential to many different Middle Eastern– inspired dishes. We love using it to add a zing to salads.

Ingredients

  • 1 red onion
  • 1 teaspoon salt
  • 2 tablespoons ground sumac

Method

  1. Slice the onion into thin rings. Combine the onion with the salt, sumac, and cayenne in a large bowl, mixing well.
  2. Slice the lemon into thin strips. Mince the garlic and parsley. Halve the tomatoes.
  3. Add the garlic, parsley, and tomatoes to the onions, then fold in the chickpeas and lemon.
  4. Drizzle the salad with the oil and pomegranate molass
