Finger food doesn’t always have to be unhealthy. Our falafel isn’t deep-fried but rather panfried in olive oil until crisp. The combination of spinach and chickpeas tastes great and is good for you.

Ingredients

For the Falafel

  • 1 cup (200 g) dried chickpeas
  • ½ onion

Method

  1. To make the falafel, place the chickpeas in a large bowl and cover with water. Set aside for 8 hours or overnight.
  2. Drain the chickpeas. Dice the onion and garlic. Combine the chickpeas, onion, and garlic in a food processor with the baking powder, cumin, and salt. Pulse until finely chopped but not puréed.
  3. Fold the spinach into the chickpea mixture.</
