We enjoy all dim sum. But dumplings, especially potstickers, are our favorites. These deliciously filled dumplings, also known as gyoza in Japan, are crisp on the outside and moist and chewy on the inside.

Ingredients

For the Filling

  • 3 dried shiitake mushrooms
  • 7 ounces (200 g) firm tofu

Method

  1. To start the filling, place the shiitakes in a small bowl and cover with boiling water. Let sit for 30 minutes.
  2. While the shiitakes are soaking, make the wrapper dough. Combine the flour, salt, and 1 cup (240 ml) hot water in a bowl. Knead until smooth. Let sit, covered, for 20 minutes.
  3. Drain the shiitakes. Crumble the tofu. Finely grate the carrot. T
