Method

  1. Coarsely chop the cilantro, parsley, and garlic.
  2. Place the cilantro, parsley, garlic, vinegar, oregano, and 3 tablespoons water in a food processor or blender. Pulse to combine. While the motor is running, stream in the oil and process until smooth. Season to taste with salt, pepper, and more oregano, if you like.
