These can be made in half an hour, are very pretty, and can be used in salads, sandwiches, or burgers as a relish. I love them so much that I eat them out of the jar and have to make more.


  • ⅝ cup [150 ml] red wine vinegar
  • 3 Tbsp sea salt
  • 2 Tbsp superfine sugar
  • 1 cup [240 ml] water
  • 1 large red onion, finely sliced


    Mix the vinegar, salt, sugar, and water, stirring to dissolve the sugar and salt. Put the onion in a sterilized 1 pt [480 ml] jar, top with as much pickling liquid as will fit, leave for 30 minutes or so, and it will turn a hot pink color. Eat within 2 weeks.
