Another cooking and preservation method that adds variety to vegan cookery is candying. Rather than adding salt to preserve a vegetable as in pickling, one adds sugar. I like to candy citrus peel, fruits, nuts, vegetables such as beets, herbs such as angelica, and flowers such as rose petals. These zucchini strips can be added to desserts or even salads! Unusual!
