I got the idea to use apple bread for grilled cheese from a tiny diner up in northern Michigan, where I stopped while on a road trip. We stumbled upon it by accident one morning when we needed a cup of coffee during a chilly September sunrise. I didn’t end up eating the sandwich that morning, but the concept stuck with me until I got back to Indiana—I just had to try it for myself.
The sweet homemade apple bread is complemented with gooey cheese and tangy mustard for a hearty lunch
