This is a delicious, quick-to-put-together fruit tart. The fruit you use is up to you. Just remember that a variety of fruits make it look appealing and taste great, too. We’ve used nectarines and cherries, but apples and blackberries would be good, as would apricots and prunes.

Ingredients

  • 3 nectarines, halved, pitted and sliced
  • 6 cherries, pitted and halved
  • 2 tbsp jam sugar

Method

  1. To make the pastry, combine the flour, salt and pinch of sugar in a mixing bowl, and using your fingertips, rub the butter into the flour until the lumps of butter are roughly the size of petits pois. Add the iced water, then use a butter knife to bring the mixture together to form a very raggedy, ropey-looking dough – do not bring it into a ball of dough. Press it gentl
