We’ve had these at Christmas time – usually on Boxing Day – for years. They are often made from all the tangerines, clementines, mandarins or oranges that formed the rounded toe of everyone’s Christmas stocking and which, in the excitement of more glamorous presents, got forgotten. Try to find fruit labelled ‘easy peel’ and ‘seedless’.

Ingredients

  • 150 g caster sugar
  • juice of ½ lemon
  • 3 t

Method

  1. Put half the sugar in a saucepan over a medium heat with 300ml water and boil it until it thickens to roughly the same consistency as maple syrup. Remove from the heat when it’s ready.
  2. Put the rest of the sugar in a small pan and add the lemon juice. Heat the sugar
