It may seem unusual to add egg to crumble mixture, but I find it provides a little more substance and makes it less sandy – both good things, in my opinion. The use of jam sugar instead of caster sugar makes the filling a little less wet, which helps the crumble on top to stay crunchy and gives it a pleasantly jammy texture.
