It may seem unusual to add egg to crumble mixture, but I find it provides a little more substance and makes it less sandy – both good things, in my opinion. The use of jam sugar instead of caster sugar makes the filling a little less wet, which helps the crumble on top to stay crunchy and gives it a pleasantly jammy texture. Feel free to substitute caster sugar for the jam sugar if you don’t have it. If greengages aren’t available, substitute any other sweet plums. Serve hot, with pouring c
