I fiddled with a couple of recipes & ended up liking this one, even though it is quite different to actual baicoli. But everyone I asked in Venice said they had never & would never make their own, but of course they can just pop down to any shop to buy them, so why would they? Anyway, yours will not be the same as the manufactured types so expect a few broken ones.
