Turbigo is a dish that I used to serve when I was Commis chef at the House of Commons and it was a firm favourite with the MPs. I prepared this dish for the central buffet where a selection of quick dishes were available, so that MPs could come in and help themselves if they were in a hurry. Turbigo takes its name from a street in Paris which in turn is named after a battle in the town of that name near Milan. This is a dish my father made many times throughout his career as a head Gueridon
