Pinchos are the northern Spanish equivalent of tapas and the term describes any small bites on a cocktail stick or skewer. Here I have used thinly sliced haunch steaks cut at an angle so that you get long slices, these are then cut in half lengthways to give two long strips that can be threaded onto skewers. The marinade contains smoky chipotle chilli paste and orange juice that penetrates the meat and works well cooked on a BBQ – perfect with a refreshing red onion and romano pepper salad.
