If you are lucky enough to harvest your own deer then you are equally lucky in having venison offal to use. I love food that is cooked over charcoal and served on sharing platters, so here is a simple recipe to place on a sharing board between two or more people, it’s a great way to eat on a warm summer’s evening.

Ingredients

  • 200 g venison liver
  • 2 venison kidneys
  • 200 ml milk</

Method

To prepare the offal, remove the skin from the liver and the kidneys, halve the kidneys lengthways, and remove the core. Soak both in milk overnight.

Slice the tomato widthways so you have a top and bottom.

Place both halves on a baking tray, add a couple of slices of garlic, season with Maldon salt and sprinkle with fresh thyme leaves then drizzle with olive oil.
