Making the filling and stuffing the squash can be done the day before serving, and roasting on the day of, just before stir-frying the baby bok choy.
Prepare the Three Treasures filling.
Coat the inside of each squash ring with the cornstarch. Stuff each ring with the filling. Brush the tops and bottoms with the oil and place on a baking sheet.
