Oyster sauce is a thick condiment that gives dishes an added umami, or deepened savory flavor. It’s often served with Turnip Cake and Stir-Fried Chinese Greens with Garlic, and is used to season many recipes. I’ve always found store-bought versions (both original and vegan) to be much too salty, so I make my own. This one has the right amount of umami from the mushrooms and seaweed, rather than a predominant salt profile.
