This is a family favorite: eggs in a peanut sauce seasoned with sweet chili. Simple, but just right for a quick weekday meal with broccoli and flavorful white rice. I like to make my own peanut butter. For the recipe.
BOIL the eggs for 7 minutes until they are just hard. Meanwhile, heat the peanut butter and the soy sauce in a saucepan for 1 minute.
POUR in the coconut milk and bring just to a boil. Heat for another 3–4 minutes, until the sauce has reached the desired thickness. Add the chili sauce and stir until smooth.
