This recipe has its origins in Louisiana’s Cajun cooking, where it’s known as “dirty rice.” The rice often has a vaguely “dirty” color, hence the name. Tomato lends a refreshing—and colorful—note to this version. It’s not traditional, but I like to add a spoonful of yogurt to this aromatic dish.
DISSOLVE the bouillon cube in 4 ¼ cups (1 liter) of hot water, then stir in the tomato paste.
CHOP the onion finely and mince the garlic. Slice the celery into arches and the bell peppers into thin strips. Cut the tomatoes in half.
