  • Whites of 8 eggs
  • cups of granulated sugar

Method

Sift the flour four times before measuring. Add salt to eggs than whip until frothy. Add cream of tartar and continue beating until eggs are stiff and dry, then add sugar gradually. Add flavoring and lastly fold the flour lightly and thoroughly through the mixture. Bake 45 minutes in a moderate oven in an unbuttered angel cake pan.
