I love angel food cake for its bright white, tight crumb and its very vanilla flavor. I also love that if you frost it with brown sugar whipped cream, you can call it “Angel Food Dream.” The name is from Learn to Bake...You’ll Love It (1947) and the recipe is from The Swans Down Cake Manual (1929). I decided to eliminate the almond extract and increase the amount of vanilla—my affection for deeply vanilla
