It is such a good thing when you find a vinaigrette that you love. It can really be the make or break of a meal. This vinaigrette is a good basic. You can tweak it until you find the variation that makes you happiest.


  • 1 tbsp Dijon mustard
  • 1 garlic clove, crushed
  • 1 tbsp castor sugar
  • 4 tbsp white wine vinegar
  • 8 tbsp extra virgin olive oil
  • sea salt
  • pinch of white pepper


    Put all the ingredients in a jar and shake thoroughly.
