Here’s another standby. By adding the oil slowly while blending, you achieve a thicker, “creamier” dressing.


  • cup red wine vinegar
  • 2 tsp hot English mustard
  • pinch of


Place vinegar, mustard, salt and pepper in a 1-litre container that you can mess in with your hand blender. Blend together, and with the motor running, slowly drizzle in the olive oil to form a dressing.
