Ingredients: 3 cups cooked black rice; 3 tbsp moskonfyt or honey; 3 tbsp sesame oil; ½ cup soya sauce; 3 tbsp moskonfyt or honey; 3 tbsp sesame seeds, toasted; 2 large carrot or 4 smaller ones, peeled and finely julienned; 3 tbsp rice wine vinegar; 1 tbsp pickled ginger; 1 cup white wine vinegar; 4 spring onions, julienned; 8 radishes, finely sliced; 2 fennel bulbs, very finely sliced; 1 tsp coriander seeds; 1 tsp fennel seeds; ½ cup sugar; 1 cup white wine; 2 garlic cloves; 1 tsp kosher salt; 2 star anise; 1 tsp black peppercorns

I dreamed this salad one morning just before waking. Yes. The Great Composers and I … dreaming delicious things into being! The star anise and fennel are favourite flavours in the pickling liquor. The vegetables just taste better and better the longer they sit in this bath of flavour. The pickled vegetables are also great on a sandwich with a rich meat (like roasted pork belly or roast chicken). Being a pickle, the vegetable bit of this salad can last a good few days in the fridge. Great fo
