This is a very simple, clean and crisp slaw. The zingy dressing is a fresh addition, setting off heavier flavours.
In a large bowl, mix the cabbage, carrots, cucumber, onion and herbs. In a small bowl, mix the dressing ingredients. Pour the dressing over the slaw and mix together with your hands or two wooden spoons. Heap the slaw onto a serving platter and serve with tongs.
