We know that most people don’t need a large slice of cake after lunch and so we craft the most perfect bite-sized treats for an ending. Being a one-bite morsel, the stakes are high: it has to be a bite of perfection – quintessentially chocolatey or lemony, creamy or nutty.


  • 200 g excellent-quality dark chocolate
  • cups cornflakes
  • 50 g sultanas or cranberries
  • 1 cup flaked almonds, toasted
  • 115 g (½ cup) glacé cherries
  • 25 g (¼ cup) glacé ginger
  • 50 g ( cup) cut mixed peel
  • 1 cup sweetened condensed milk


    Preheat oven to 180°C.

    Line the base of a shallow 20 cm square cake tin with baking paper.

    Lightly grease the sides.

    Melt the chocolate in a heatproof bowl set over a pan of hot water.

    Spread the melted chocolate evenly over the base of the tin.

    Put in the fridge to set.

    Place the cornflakes, sultanas, almonds, glacé fruit and mixed peel in a large bowl. Pour over the condensed milk and toss the mixture gently, using a fork.

    Spread the mixture evenly over the chocolate base and bake for 12–15 minutes.

    Leave to cool before cutting into tiny squares with a very sharp knife.
