Although this salad requires dicing and chopping, it is very rewarding to make. It will bring a burst of colour and freshness to your table.


  • 2 yellow peppers, finely diced
  • 1 red pepper, finely diced
  • 1½ red onions, finely diced
  • 500 g cherry tomatoes, cut in half
  • 1 medium cucumber, finely diced
  • 1 clove garlic, finely chopped
  • 30 g coriander with the stem, roughly chopped
  • 30 g parsley with the stem, roughly chopped
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • salt and black pepper to taste


    Place all the ingredients into a large mixing bowl and mix together with your hands or two wooden spoons. Add salt and pepper to taste. Arrange on a serving platter or in a bowl.
