I learnt so much in the tiny galley kitchen at Finns on Chelsea Green (just off the Kings Road) in London. I suppose it is here that I gained confidence as a cook. People were taking me seriously! I worked alongside Australians and New Zealanders in my chef’s whites, then took those off, donned my lipstick and went off with the food for the party in a taxi cab to waitress the party that I had just made.
