Such a bright green, this peppery broccoli is verdant deliciousness.


  • 2 heads of broccoli, cut into florets


    Bring a large saucepan of water to the boil and blanche the broccoli florets. Drain in a colander.

    Put garlic, most of the rocket (save a few leaves for garnish), and salt into a food processor and blitz to chop. With the motor running, slowly add the olive oil to make a smooth dressing. If using the Greek yoghurt, drop the olive oil amount to 2 tablespoons and add the yoghurt to make a smooth dressing in your processor. Toss the broccoli with the dressing and lay on a serving platter. Garnish with the rocket leaves and scatter sea salt and lots of freshly ground black pepper. Garnish with lemon wedges.
