When I was little, my mom used to make a fantastic fried chicken dish called Hong Kong Chicken. Look as I might through the recipe files and books with place markers upon place markers, I cannot find the Hong Kong Chicken! She is very vague about the recipe. I have been forced to create this one, which is really a yearning after another. No one else seems to mind. They all seem perfectly delighted with the Barbecued Sesame Chicken!



    Whisk all the marinade ingredients together in a bowl or deep jug. Lay out the prepared chicken breasts neatly in a baking tray. Pour over the marinade. Cover and refrigerate for an hour, or overnight if you can.

    Take out of the fridge an hour before you intend baking. Preheat the oven to 180°C. Bake for 20 minutes at 180°C. Remove from the oven and put your oven onto grill. Sprinkle the breasts with another 3 tablespoons of brown sugar and grill for 6 minutes or until the breasts have a deep colour.

    Be careful not to overdo the chicken breasts. If you are doing fewer at a time, baking time might be a bit less.

    Allow to rest for 10 minutes before slicing.
