At Finns on Chelsea Green, just off London’s Kings Road, we’d make lots of this salad for very posh ladies who would come and collect delicious English staples for a weekend in the country. The Beetroot Apple Coriander Salad is still one of my favourites! It works so well wherever it goes!

Ingredients

4 medium beetroots, boiled until tender and grated
4 medium Granny Smith apples, roughly peeled and grated
(equal quantity of beetroot and apple)

Gluten-free
Vegetarian

Method

Combine all the ingredients together with wooden spoons or salad servers. Be gentle. You don’t want to mush your salad. This one needs serving in a deeper bowl.
