At Finns on Chelsea Green, just off London’s Kings Road, we’d make lots of this salad for very posh ladies who would come and collect delicious English staples for a weekend in the country. The Beetroot Apple Coriander Salad is still one of my favourites! It works so well wherever it goes!

Ingredients

  • 4 medium beetroots, boiled until tender and grated
  • 4 medium Granny Smith apples, roughly peeled and grated
  • (equal quantity of beetroot and apple)

Method

Combine all the ingredients together with wooden spoons or salad servers. Be gentle. You don’t want to mush your salad. This one needs serving in a deeper bowl.
