  • Dried small white beans such as cannellini or navy, 2 lb (1 kg), picked over and rinsed

Method

Put the beans in a large pot, add cold water to cover, and bring to a boil. Drain the beans and transfer to a Dutch oven or slow cooker. In a frying pan over medium-high heat, warm the oil.
