Ingredients

  • Beef short ribs, 4–5 lb (2–2.5 kg) total weight, cut into 3-inch (7.5-cm) pieces
  • Salt and freshly ground pepper

Method

  • Brown the ribs

    Preheat the oven to 325°F(165°C). Season the ribs with salt and pepper. In a Dutch oven or large ovenproof frying pan over high heat, warm the oil. Working in batches if necessary, add the ribs, and cook, turning once, until browned
