  • Bone-in, center-cut pork loin chops, 4, each about ¾ inch (2 cm) thick

Method

  • Brown the pork chops

    Season the pork chops with salt and pepper. In a large frying pan over medium-high heat, warm the oil. Add the chops and cook, turning once, until golden brown, about 5 minutes total. Transfer to a plate.

This turned out very well but I made changes to the sauce, adding star anise, slices of apple and a little fruit sugar. Without these it was a little too tart - maybe I added too much vinegar? - and one dimensional. Reducing it to a satisfactory consistency and flavour took much more than 8-10 minutes. The pork longer than five minutes … perhaps depends how pink you like it. Cooked very gently with a lid on the heavy pan, it was tender.
