Jazzed-Up Oatmeal

This embellished oatmeal takes only minutes to prepare and adds even more cholesterol-lowering fiber to an already healthful breakfast.

Ingredients

  • cups organic soy milk, plus additional as desired when serving
  • cups water
  • 1 organic apple, Pink Lady or other, cored and coarsely chopped
  • ¼ cup dried apricots, sliced
  • ¼ cup dried cranberries
  • ¼ cup sliced almonds
  • 2 cups organic rolled oats
  • ¼ cup local pure maple syrup
  • 2 teaspoons cinnamon
  • 2 organic bananas, sliced

Method

  1. Bring the soy milk and water to a boil in a heavy pot over high heat. Add the apple, apricots, cranberries, almonds, and oats. Stir to combine.
  2. Lower the heat to medium and cook for about 3-5 minutes, stirring occasionally until the oats are cooked and thickened to your preference. Remove from the heat and stir in the maple syrup, cinnamon, and bananas. Serve with additional soy milk as desired.
