Bring the soy milk and water to a boil in a heavy pot over high heat. Add the apple, apricots, cranberries, almonds, and oats. Stir to combine.
Lower the heat to medium and cook for about 3-5 minutes, stirring occasionally until the oats are cooked and thickened to your preference. Remove from the heat and stir in the maple syrup, cinnamon, and bananas. Serve with additional soy milk as desired.
