This parfait is beautiful and healthful. And it’s easy to bring along to eat at your desk, or for the kids to eat while waiting for the school bus. Plan on using an ice pack to keep the yogurt fresh and safe if you are packing the parfait to travel.


  • 4 cups organic low-fat yogurt
  • 2 cups whole grain, fruit, and nut granola
  • 2 cups assorted organic berries, fresh or defrosted if frozen
  • ½ cup raw pumpkin seeds
  • 4 teaspoons organic flax oil (optional)
  • 4-8 teaspoons local honey


  1. Line up 4 bowls or glasses (or biodegradable, disposable cups if you’ll be taking your yogurt parfaits “to go”). Into each bowl, spoon ½ cup of yogurt, ¼ cup of granola, ¼ cup of berries, and 1 tablespoon pumpkin seeds. Repeat to make another layer.
  2. Drizzle a teaspoon of the flax oil onto each parfait. Top with 1-2 teaspoons of honey, depending on the sweetness you want. Enjoy!
