How can you go wrong with fresh garlic and herbs and Parmesan cheese? I serve this bread with just about any soup or salad and we love it in our house and at Claire’s Corner Copia, too.

Ingredients

  • 2 tablespoons organic butter or organic cholesterol-free buttery spread, softened
  • 1 tablespoon extra-virgin olive oil
  • 3 large cloves organic garlic, finely chopped
  • 1 tablespoon each finely chopped organic chives, basil, and parsley
  • 3 tablespoons grated Parmesan cheese
  • Sea salt and pepper
  • 6 1-inch slices whole wheat Italian or French bread

Method

  1. Arrange the oven rack on the second rung from the top. Preheat the broiler to high. In a bowl, combine the softened butter with the olive oil, garlic, herbs, and Parmesan cheese. Sprinkle lightly with sea salt (the Parmesan cheese is a bit salty) and pepper. Using a spoon, mix to combine. Taste for seasonings.
  2. Spread about a heaping teaspoon of the butter spread on one cut side of each slice of bread. Arrange the bread slices, spread side up, in a single layer on a cookie sheet. Broil for about 3 minutes, until the butter has melted and the bread slices are golden brown around the edges.
