Tabouli is a healthful salad of bulgur (cracked wheat). You can find bulgur in health food stores and in the gourmet section of most supermarkets. Bulgur is a delicious way to add more fiber to your diet. It’s been popular on our menu for thirty-five years, and one of the “foodie” magazines listed it as a “hot food trend” a couple of years ago!

Ingredients

  • 1 pound bulgur
  • 1 bunch parsley, leaves chopped, stems discarded
  • 1 small red onion, coarsely chopped
  • ¼ cup olive oil
  • Juice of 2 lemons
  • 2 teaspoons dried mint
  • Salt, to taste
  • ½ teaspoon black pepper
  • Romaine leaves, torn, for serving
  • 1 tomato, cut into wedges, for serving
  • 1 lemon, cut into wedges, for serving

Method

Place the bulgur in a large bowl. Pour over it enough hot water to cover by ¼ inch. Let stand for 1 hour. Add the parsley, red onion, olive oil, lemon juice, and mint, toss well, and taste for seasoning. Serve over torn romaine leaves with tomato and lemon wedges. Drizzle with additional olive oil, if desired.
